Matcha Tiramisu Recipe By Holly Belle Wood

This recipe shows how to create a matcha twist on traditional tiramisu, using ceremonial matcha instead of espresso.

A five-ingredient mascarpone cream is layered with ladyfingers dipped in freshly whisked matcha, then chilled and dusted with more matcha before serving.

Ingredients

  • 3 egg yolks
  • 75 g caster sugar, divided
  • 250 g mascarpone
  • 300 ml thickened cream
  • 1 tsp vanilla bean paste
  • 10 g EISAI Organic Ceremonial Matcha Powder
  • 250 ml water (heated to approximately 70°C)
  • 24 ladyfinger biscuits (adjust based on dish size)
  • Additional matcha powder, for dusting

Directions

  1. In a heatproof bowl, whisk the egg yolks and 50 g of sugar. Place the bowl over a saucepan of simmering water, ensuring the bottom doesn’t touch the water. Whisk until thickened and the mixture reaches 70°C, then remove from heat and cool.
  2. Gently stir mascarpone into the cooled egg mixture until smooth. In a separate bowl, whisk the thickened cream, remaining sugar, and vanilla bean paste until stiff peaks form. Fold the whipped cream into the mascarpone mixture.
  3. Sift matcha powder into a bowl and whisk with a small amount of warm water until frothy and lump-free. Add the remaining water and whisk to combine.
  4. Dip each ladyfinger for 2–3 seconds in the matcha mixture. Dust the bottom of a 20 cm square dish with matcha, then arrange one full layer of dipped ladyfingers.
  5. Spread half the mascarpone cream over the ladyfingers. Add a second layer of dipped biscuits and top with the remaining cream.
  6. Refrigerate for at least 4 hours or overnight. Dust with matcha before serving.

Does matcha tiramisu contain coffee?

No — freshly whisked matcha completely replaces the espresso, giving the same bittersweet contrast against the mascarpone cream with a green tea character.

How long should it chill?

At least 4 hours, but overnight is best. The ladyfingers soften into the cream and the layers set for clean slices.

Why dip the ladyfingers so briefly?

Two to three seconds is enough — any longer and the biscuits absorb too much liquid and the layers turn soggy.
