Recipe questions
What creates the 'cloud' layer?
Whisking the matcha directly into cream and milk with a battery frother creates a thick, airy matcha cream that floats on the coconut water.
Can I make it dairy free?
Yes — a whippable coconut or oat cream works for the cloud layer, though it will be slightly less stable than dairy cream.
What matcha grade works best?
A premium grade like HINOKA stays smooth and vibrant in cream. Sift it first so the cloud layer is completely lump-free.
