Earth Day Matcha AKA Windows XP
This one is pure visual fun - a matcha latte styled after the classic Windows XP Bliss wallpaper: rolling green hills, fluffy clouds and a blue sky. It's a playful Earth Day drink that tastes as good as it looks.
We're using our KIYOKA blend, a single-cultivar Saemidori matcha with a vibrant green colour and a floral, lightly sweet profile. That brightness reads as the hills under the blue sky. The clouds are a medium-peak cream top dabbed onto the glass, and the sky is the same cream loosened with a little milk and tinted with butterfly pea powder.

- 4g matcha powder
- 40ml hot water at 75°C
- 60ml heavy cream
- 1 tsp sweetener (honey, maple or simple syrup)
- 1/2 tsp butterfly pea powder
- 1 tbsp milk or heavy cream (to loosen the sky)
- 100ml milk
- Ice
Directions
- Sift 4g of KIYOKA matcha into a bowl, add 40ml of 75°C water and whisk in a zigzag motion until smooth and frothy. Use the 30-20-10 rule as a guideline: about 30 seconds hard whisking, 20 seconds to settle the foam, then 10 seconds of gentle surface whisking. KIYOKA's Saemidori colour is especially vivid here - that bright green becomes the hills of the drink.
- Using a frother, whisk 60ml heavy cream with 1 tsp sweetener until medium peaks. Carefully dab the cream onto the inside walls of your glass to form the clouds.
- Add 1/2 tsp butterfly pea powder and 1 tbsp milk or heavy cream to the remaining cream to loosen it, then whisk again until thick but pourable for the blue sky. Butterfly pea tastes gently earthy - a fitting note for an Earth Day drink.
- Add ice and 100ml milk to the glass, then assemble carefully - pour in the matcha and blue sky without ruining the clouds - so the layers settle into green hills, white clouds and blue sky.

Recipe questions
Can I use a different matcha than KIYOKA?
Yes. Any vibrant ceremonial matcha works for the green hills, but KIYOKA's Saemidori cultivar is especially bright and floral, which helps the Windows XP look pop. A darker, more savoury matcha will still taste great - the landscape just reads a little less neon-green.
What is the 30-20-10 whisking rule?
It is Jacky's guideline for a creamy bowl: whisk hard in a zigzag for about 30 seconds, pause for around 20 seconds so larger bubbles settle, then finish with about 10 seconds of gentle whisking across the surface for a fine microfoam.
How do I get the cream clouds to stick?
Froth the cream to medium peaks - thick enough to dab onto the glass without sliding, but not so stiff that it looks dry. Dab carefully onto the inside walls before you add ice, milk and matcha.
What is butterfly pea powder, and can I swap it?
Butterfly pea is a natural blue powder from Clitoria ternatea flowers. It gives the sky its colour and has a mild earthy taste. Blue spirulina also works for colour; start with a little less so the drink does not turn grey-green when it meets the matcha.
