Iced Matcha Ginger Beer Recipe
Cold, spicy and vividly green, this iced matcha ginger beer is a zero-alcohol drink that pours like a beer but tastes unmistakably like matcha.
The ginger beer brings sweetness, fizz and a warming ginger bite, while RYŌKA matcha adds smooth earthiness and a clean finish. There is no syrup to make and no hot water required — just sift, stir, ice and pour.
Choose a non-alcoholic ginger beer you enjoy drinking on its own. A drier bottle gives the matcha more room to shine; a sweeter one makes an easy dessert-style drink.

Ingredients
- 5g RYŌKA premium Uji matcha powder
- 300ml non-alcoholic ginger beer, chilled
- 1 cup ice
Directions
- Sift 5g of RYŌKA matcha into a bowl.
- Add 50ml of chilled ginger beer and stir until the matcha is smooth. There is no need to whisk.
- Fill a serving glass with ice and pour in the matcha concentrate.
- Slowly add the remaining 250ml ginger beer to control the foam. Stir gently and serve straight away.

Do I need hot water or a bamboo whisk?
No. Stirring sifted matcha with 50ml of cold ginger beer makes the concentrate. Add the ginger beer gradually and stir until smooth so the carbonation does not foam over.
Which ginger beer works best?
Use a chilled non-alcoholic ginger beer you enjoy on its own. A dry, spicy style keeps the drink matcha-forward, while a sweeter ginger beer makes it softer and more dessert-like.
Why pour the ginger beer slowly?
Matcha gives the bubbles plenty of places to form, so a fast pour can create a large head of foam. Pour slowly down the side of the glass and pause if the foam rises.
Can I make this drink less strong?
Yes. Start with 3g of matcha for a lighter drink. The full 5g gives a bold matcha flavour that stays present against 300ml of ginger beer.
