This organic matcha tea is from the Yubukita cultivar, the most widely grown cultivar in Japan accounting for 77% of all tea plants in Japan. While all tea plants belong to the camellia family, Yubukita is simply a cultivar within the camellia family. It is an age old plant and was originally bred in 1908 by Hikosaburo Sugiyama in Shizuoka. It was only until 1954 when it was officially lodged and registered.
Yabukita can be easily recognised by its long, straight, intense green leaf. Yubukita is popular amongst tea growers because of its high yield and its distinct umami flavour. It is frost resistant and can also be cultivated in different soils and climate.
The name Yabukita derives from the place from where the tea was grown for the first time, a bamboo bush grove (Yabu) and the north (Kita).
How to brew matcha
- Sift 1-2 tsp of matcha into a tea cup
- Add 80ml of hot water (NOT BOILING WATER!) and whisk vigorously in a zig zag motion until frothy.

What is culinary grade Matcha
Typically known as kitchen or ingredient grade matcha, the tealeaves used are older, as they get more sun exposure to the youngest leaves at the top of the Camellia sinensis plant.
As such, this grade of culinary matcha is usually not as vibrant green as ceremonial grade Matcha.
