Matcha Yuzu Soda Recipe

  1. Add 3g of matcha powder to bowl
  2. Add 50ml of hot water
  3. Whisk together
  4. Add 2-3 tbsp of yuzu jam to glass
  5. Add half glass of ice
  6. Add 50ml of hot water (70°C / 158°F).
  7. Add 200ml of soda water
  8. Pour Matcha tea over the top.

Yuzu jam (yuja-cheong) is available at most Asian grocers and some supermarkets. If you can't find it, marmalade with a squeeze of fresh lime is the closest substitute.
