A. The leaves are shaded just like ceremonial matcha, however, instead of using only first flush tea leaves, this culinary matcha is a blend of first and second pickings. As a result, the flavour is stronger with a little more bitterness and astringency. A machine is used to pick the tea leaves instead of hand picked leaves used in ceremonial grade.
